I like the Outcast PA and the Enclave mk. II from Fallout 2. Those armors just rock!

At first I'll probably try it on normal mode, but when I learn the mechanics (if they're not the same as in F3) I'll move on to the HC mode. BTW, that mode is really a pretty awesome idea. Now it'll be a little closer to a simulator without actually being one.
