I believe they modelled it by making actual models (see the deathclaw sculpture) then scanning it into the PC which created a 3D model. This was then maniupulated and animated and obviously pixelised!

Yeah, If you notice on that picture you posted the item description was a bit off and had spaces missing from important places like the end of sentences.

Edit the description to add some spaces between punctuation marks.
