Not really. Rollercoasters aren't generally built to endure centuries. Hell, most buildings aren't.

If we're going to criticize Fallout 3 for its wooden houses you better be damned sure we should give New Vegas shit for keeping up rollercoasters. If it still works I'll punch someone.
 
If you look at pics of abandonned rollercoasters, you'll in fact find that most are still standing. But when you do some investigative work, you soon discover that all of these were closed only a couple of decades ago at most. Even the one in Lake Chippewa, which seems to be sorta famous for it, closed only in 1978 and all of the stuff there has either all but completely broken down (I love this pic) and/or it has been reclaimed or overgrown by nature:



Which is probably helping it from coming down completely when you think about it. :D

Now imagine what twice the amount of time would cause. Or thrice. Or four times.

It just doesn't make much sense to me. That's all.
 
FEV altered the genetic structure of much of Earth's wood, reanimating it. On a cellular level, all wooden rollercoasters have been repairing themselves for centuries. In fact, some have even been observed reproducing. Herds of wild 'coasters are not infrequent in the post-nuclear Mojave.
